世界で最も希少な高級コーヒーと言われる、Kopi Luwak（コピ・ルアック）

インドネシアで農民たちがコーヒー豆を収穫する際に、コーヒーチェリーを食した野生のジャコウネコの排泄物の中から、コーヒー豆を取り出したところから始まったとされています。

なぜ高級？？

ジャコウネコは美味しいコーヒーの実だけを食べる習性があります。消化器官を通る工程で、酵素による特殊な変化が起き、最高品質のコーヒー豆が出来るということなのです！さらに消化されずに残った豆を使うので、取れる豆も限られ、洗浄・乾燥・焙煎の工程があり、生産と労力がかかる事から希少価値のあるコーヒーというわけですね！

どんな香り？

独特な香味を持つと言われているのは、ジャコウネコ腸内の消化酵素の働きや腸内細菌によるものです。
ジャコウネコの糞は、香水にも使用されているほど、「香り」を作るのに花の香りに輝きを付加する効能があるようです。
シャネルの５番にも使われていたそうですよ。

どんな味？

フルーティーな香りで、最初の一口は、舌触りが独特に感じます。
飲んでいるうちに、とても飲みやすさが口に広がります。シュトーレンのような洋菓子とも相性がバッチリで、主張しすぎない味。品の良さがうかがえます。
このコーヒー、高級ホテルやお店で飲むと、１杯70ドルする幻のコーヒーと言われています！
